- CC Africa announces wildlife lodges in India:
Breaking new ground in the Indian tourism industry, CC
Africa has unveiled an exciting joint venture with Taj
Hotels Resorts and Palaces. This collaboration will provide
international and domestic guests with the ultimate interpretive
wildlife experience in India based on a proven sustainable ecotourism
model. Guests will benefit from the expertise of CC Africa in
delivering a unique and in-depth wildlife experience and the Taj’s
legendary hospitality. The first two lodges will
open in October 2005 with a further three in the following two
years. The long-term strategy aims at 20 lodges across the subcontinent
hosting guests on new wilderness circuits.
- We are thrilled that three of our safari lodges – Kichwa
Tembo in Kenya (2nd place), Londolozi
(4th) and Phinda in South Africa (8th) –
were rated in this year’s US Travel + Leisure magazine’s
Top 10 World’s Best Hotels. We are proud to add
that seven of the highest rated hotels are situated in Africa
and we hope that this shift in interest in our continent will
continue to grow. CC Africa’s Kwandwe Private Game

- Great Migration Update: Here it is straight
from our staff on the ground: “The migrating animals
have reached Kichwa Tembo at long last. Joseph Masibo and some
guests found about two hundred thousand wildebeests in the dry
marsh area five kilometres south-west of Kichwa Tembo…The
water level in the Mara River has picked up considerably. There
is no need to worry about the animals walking across rather than
swimming. Crocodiles are now in a position to feed well. Kill
actions have been prolific at the crossing points.”

ZANZIBAR
- After a total rebuild in which everything yet nothing has changed
at Mnemba Island Lodge, East Africa’s favourite
private island is continuing to impress guests and international

we could watch the animals. Hippo and elephant came through the

RECIPE OF THE MONTH
Orange Sweet Potato and Pineapple Salad
From the Kitchen Team @ Nxabega Okavango Safari Camp (Botswana)
- 2 large orange sweet potatoes (about 700g/1.5 pounds), peeled
and cut into 1.5cm (0.05feet) thick slices
- 1½ tablespoons vegetable oil
- ½ large ripe pineapple, peeled and cored
- 1-2 fresh large red chillies, seeded and thinly sliced
- 1 small Spanish onion, thinly sliced
- ½ Lebanese cucumber, seeded and cut into julienne strips
- 4 green onions, thinly sliced
- ½ cup coarsely chopped mint leaves
- 1 tablespoon lime juice
- 1/3 cup olive oil
Place sweet potato slices in a large roasting pan. Drizzle with
oil, toss to coat and roast at 190°C/374°F for 15-20 minutes
or until tender. Set aside to cool. Cut pineapple into bite-size
pieces and place in a large bowl. Add chilli, onion, cucumber, green
onions, mint and roasted sweet potato and season to taste with sea
salt and freshly ground black pepper. Combine lime juice and oil
and pour over salad. Toss to combine.
